Ingredients
- 6 pcs egg (about 300 ml)
- 300 g Shrimp (shell removed)
- 50 g yellow chives (sectioned)
- 2 tbsp diced green onions
Seasoning for eggs
- ½ tsp sea salt
- 2 tsp cornstarch
- 1 tsp chicken powder (Optional)
- 2 tbsp water
- 1 tbsp oil
Seasoning
- ½ tsp sea salt
- ½ tsp garlic powder
- 2 tsp cornstarch
Instructions
- Peel and devein the shrimps. Mix it well with some cornstarch. Rinse and clean it well. Pat dry it. Seasoning it with seasoning. Chill it in a fridge for 30 mins
- Beat the eggs well, add the egg seasoning and mix thoroughly, then set aside for later use.
- Heat the pan with high heat with 2tsp of oil. Pan fry the shrimps until both side are golden brown. Dish it up and put it aside
- Heat the wok over low heat, add 1 teaspoon of oil (no need to heat it), then add half of the beaten eggs. Stir slowly until the eggs start to set, then remove and set aside.
- Heat the wok over medium-high heat, add 1 teaspoon of oil and heat it up. Add half of the beaten eggs and pan-fry until the bottom is golden brown (about 1-2 minutes).
- Before the egg start to set, add the shrimps, yellow chives, diced green onion all over evenly. Pan-fry the egg for another 30 seconds. Flip the egg over
- Cut the egg into large pieces with spatula. Add in the scrambled egg set aside earlier, and mix them well. Dish it up and serve
Notes
Tips and notes
1- Shrimps will be firm if it has been chilled.
2 Mix the shrimp with some constrach before pan-frying it. The shrimps won't release any water (or juice) after cooked
