Peel and devein the shrimps. Mix it well with some cornstarch. Rinse and clean it well. Pat dry it. Seasoning it with seasoning. Chill it in a fridge for 30 mins
Beat the eggs well, add the egg seasoning and mix thoroughly, then set aside for later use.
Heat the pan with high heat with 2tsp of oil. Pan fry the shrimps until both side are golden brown. Dish it up and put it aside
Heat the wok over low heat, add 1 teaspoon of oil (no need to heat it), then add half of the beaten eggs. Stir slowly until the eggs start to set, then remove and set aside.
Heat the wok over medium-high heat, add 1 teaspoon of oil and heat it up. Add half of the beaten eggs and pan-fry until the bottom is golden brown (about 1-2 minutes).
Before the egg start to set, add the shrimps, yellow chives, diced green onion all over evenly. Pan-fry the egg for another 30 seconds. Flip the egg over
Cut the egg into large pieces with spatula. Add in the scrambled egg set aside earlier, and mix them well. Dish it up and serve
