Ingredients
- 950 g chicken drumsticks (about 14 pcs)
Seasoning
- 1 tbsp sea salt
- 2 tsp chicken powder
- 2 tsp sugar
- 1 pcs egg
- 2 tsp garlic powder
- 2 tsp onion powder (Optional)
- 2 tsp thyme
- 2 tsp rosemary (Optional)
- 2 tsp basil (Optional)
- 2 tsp oregano
- 1 tsp ground black pepper
- 1 tbsp oil
- 3 tbsp yogurt
Crust mixture
- 20 g fine breadcrumb
- 60 g coarse sweet potato starch (or use all purpose flour or cornstarch)
- 2 tbsp paprika
- 1 tsp baking powder
Instructions
- Cut along the bone at the bottom of the drumsticks with a knife. Marinate with the seasoning for at least 3 hours or even overnight
- Place the coating ingredients into a plastic bag. Add the marinated drumsticks to the bag and shake until the drumsticks are fully coated with the mixture.
- Arrange the drumsticks evenly on a baking sheet and brush them with oil.
- Air fry it with 180°C/350°F for 18-20 mins
- Or oven roasted with 220°C/425°F for 25-30 mins

Tips and notes
1 Place the drumsticks with the cut side down on the baking sheet. This side won't be crispy, but it won't significantly affect the overall taste. For a more refined result, turn the drumsticks over in the last 10 minutes of baking to ensure they become crispy all over.
