It is one of my favorite dish when I was young. My family love to make it this for appetizer. It is crunchy and full of flavor. Luckily it is not hard to get the pig ears in Canada. I can make it anytime I want. It is excellent for hot summer time.

Ingredients
- 3 pcs pork ears
Chinese marinate aromatic herbs
- 3 pcs bay leaves
- 2 pcs slices of ginger
- 4 pcs garlic
- 2 pcs cinnamon stick
- 2 pcs star anise
- 2 tsp fennel seed
Chinese marinate ingredients
- 60 g rock sugar
- 1 tbsp Chinese rose wine
- ½ tbsp chicken powder
- 1 tsp sea salt
- 150 ml dark soy sauce
- 100 ml light soy sauce
- 600 ml water
Garlic vinegar mixture
- 50 ml white vinegar
- 2 tbsp minced garlic
- 2 tsp sugar
- ½ tsp sea salt
Instructions
- Boil the pork ears into boiling water over high heat for 5 mins. Rinse and clean it well.
- Pan fry the Chinese marinate aromatic herbs in a pan over medium heat for 2 mins
- Add the Chinese marinate ingredients into the pot. Bring it to boil over high heat. Add in Chinese marinate aromatic herbs. Turn the heat down to low. Cover and simmer for 15 mins
- Add in the pork ears. Bring the mixture to boil again. Cover and simmer for 5 mins
- Turn off the heat and let it sit for at least 2 hours (or over night). Take the pork ears out and slice it. Serve it the garlic vinegar mixture. Enjoy
Notes
You can save the Chinese marinate and using it in future. Just keep the mixture into freezer. When re-using it, adjust the taste accordingly.
