Ingredients
- 600 g chicken breast
- 1 pcs egg
- 2 tbsp all purpose flour
- 4 bowl cooked white rice
- 1 pcs egg
- 50 g tomato (cut into pieces)
- 50 g onion (cut into pieces)
- 20 g assorted vegetable
- 130 g shredded Mozzarella cheese (fig1)
- 2 slice cheddar cheese slice
- 1 tbsp minced garlic
Seasoning
- 1 tsp sea salt
- 1 tsp chicken powder (Optional)
- 1 tsp garlic powder
- 2 tsp sugar
- 1 tbsp olive oil (fig2)
- 3 tbsp yogurt (fig3)
Crust mixture
- 150 g cornflakes (mashed/fig4)
- 100 g breadcrumbs (fig5)
- 2 tbsp olive oil (fig2)
Sauce mixture
- 2 tsp sugar
- 1 tsp Maggi seasoning (fig6)
- 1 tsp dark soy sauce
- 300 ml water
- ½ tsp chicken powder
- 1 tbsp tomato paste (fig7)
- 2 tbsp ketchup
- 1 tbsp gochujang (fig8)
Starch mixture
- 2 tbsp cornstarch
- 3 tbsp water
Instructions
- Seasoning the chicken for at least 3 hours. Prepare the rice and let it cool down completely. Mix and combine well the crust mixture.
- Mix in the egg the cornstarch with the chicken. Coat the chicken with the crust mixture. Freeze them for 15 mins
- Air fry the chicken 185°C/360°F for 6 mins
- Meanwhile, heat the pan with 1 tsp oil over medium high heat. Stir fry the onion, assorted vege, tomato and minced garlic for 2 mins
- Add in sauce mixture and bring it to boil. Add enough starch mixture to thicken the sauce. Put it aside.
- Turn the chicken over. Air fry 195°C/380 °F for 4 mins
- On the same time, heat the pan with 2 tsp of oil over high heat. Mix the egg with the rice. Stir fry the rice until golden. Add 1/2 tsp salt to season
- Put fried rice in a tray. Top with tomato sauce. Top 1/2 cheese. Top the fried chicken. Top with cheese slice. Top another fried chicken. Top with 1/2 cheese.
- Air fry all ingredients with 195°C/380 °F for 3 mins or until the cheese is melted and golden.

Tips
If there is any left over chicken and sauce, just serve them together as a new dish
The easiest to make the best fried rice is to mix the rice with egg before add it to the pan
Pan-fried or oven baked chicken breast:
Frying pan method: You can use medium heat, pan fry for 4-5 minutes on each side.
2 For oven bake: Baked at 220°C/425°F for 13-15 minutes. Flip once.
