Char Siu Tomato Scrambled Eggs

Tomato scrambled eggs are undoubtedly one of the classic household dishes. This time, I've added some savory char siu, instantly elevating the flavor. Don't think that char siu and tomatoes don't go well together—in fact, "Char Siu Tomato macaroni" have been a popular combination in many Hong Kong resto, so char siu tomato scrambled eggs are just as fitting. Of course, the secret tomato sauce I use in this dish adds the perfect finishing touch. I guarantee that once you try it, you'll be hooked and won't be able to get enough!

Ingredients
 

  • 400 g Char siu (diced)
  • 6 pcs egg (about 300 ml)
  • 200 g tomato about 2 pcs, cut into pieces
  • 50 g yellow chives (sectioned)
  • 2 tbsp diced green onions

Seasoning for eggs

  • ½ tsp  sea salt
  • 2 tsp  cornstarch
  • 1 tsp  chicken powder (Optional)
  • 2 tbsp water

Sauce mixture

  • 1 tsp Maggi seasoning (fig1)
  • 1 tsp dark soy sauce (fig2)
  • 1 tsp chicken powder
  • 3 tbsp ketchup
  • 1 tbsp tomato paste (fig3)
  • 1.5 tbsp sugar
  • 200 ml water

Instructions
 

  • Beat the eggs well, add the egg seasoning and mix thoroughly, then set aside for later use.
  • Add 1 teaspoon of oil to the wok and heat it over high heat. Add the tomatoes and ½ teaspoon of sugar, stir-frying for 1-2 minutes until the tomatoes soften.
  • Add the sauce mixture, mix it well and bring it to boil. Turn the heat to low. Cover and simmer for 10 mins
  • Heat 1-2 teaspoons of oil in a wok over medium-high heat. Add the egg mixture and cook until the bottom is golden and the top is just set. Take it out and set aside.
  • Bring the tomato sauce mixture back to boil over high heat. Add in the yellow chive, char siu, and scrambled egg. Turn off the heat. Mix it well and dish it up. Ganish it with green onion. Serve and enjoy!
