This is a unique Chinese dish I discovered after immigrating to Montreal, Canada. I had never heard of "Shan Zhi" before, but the first taste revealed a white sweet and sour sauce, smooth and delicious, with a balanced flavor. It contains also the crispy fried chicken and shrimp balls. The elegant and enticing name on the menu immediately drew me in. Ingredients
- 450 g Shrimp (shell removed)
- 200 g chicken fillet
Sauce mixture
- 6 tbsp mayonnaise (fig1)
- 2 tbsp condensed milk (fig2)
- 3 tbsp evaporated milk (fig3)
- 2 tsp lemon juice
shrimp seasoning
- ½ tsp sea salt
- ½ tsp garlic powder
- ¼ tsp white pepper
Chicken seasoning
- ½ tsp chicken powder
- 1 tsp sea salt
- ½ tsp garlic powder
- ½ tsp sugar
- 1 tsp water
Batter for Frying
- 120 g all-purpose flour (fig4)
- 1 tbsp baking powder (fig5)
- 1 tbsp cornstarch (fig6)
- ½ tbsp oil
- 240 ml ice water
Instructions
- Chicken and shrimps marinade with seasonings for 15 minutes
- Mix the sauce ingredients and refrigerate.
- Add gradually ice cold water to the batter mixture until the batter is thickened. Add chickens and shrimps in batter and mix them well
- Heat 240 ml of oil in a pan to 180°C
- Fry each piece until golden brown, about 5-6 minutes.
- Mix the fried chicken and shrimp with the sauce, then plate and serve
