Ingredients
 

  • 400 g beef tenderloin (cut into pieces)
  • 40 g onion about 1 pcs, cut into pieces
  • 80 g yellow chives
  • 25 g shredded green onion
  • 4 pcs egg (beaten)
  • 300 ml chicken broth (fig1)
  • ½ tsp sea salt

Starch mixture

  • 2 tbsp cornstarch
  • 3 tbsp water

Beef seasoning

  • 1 tbsp light soy sauce (fig2)
  • 2 tsp sugar
  • 1 tsp garlic powder
  • ½ tsp ground black pepper
  • 1 tsp cornstarch
  • 3 tbsp water
  • ½ tsp baking soda (fig3)
  • 1 tbsp oil

Instructions
 

  • Mix the baking soda with water. Add it with the reset of the seasoning into the beef and mix it well. Marinade for at least 30 mins
  • Add 2 tsp of oil in the pan. Heat it with high heat. When the pan and hot is oil. Add in the beef and pan-fry until both side is golden. When it is about medium done, dish it up and put it aside.
  • Heat 1 teaspoon of oil in a pan over high heat. Add the shredded onions and stir-fry until softened, about 1 minute. Remove from the pan and set aside
  • Bring the chicken to boil over high heat in the pan. Add the salt to season. Once it is boiled, add in the shredded green onion, yellow chives, cooked onion and cooked beef
  • Add starch mixture until the sauce thickens. Then, reduce the heat to lowest. Pour in the beaten eggs. Let is cook for about 1 minute or until they just begin to set.
  • Mix well all ingredients together. Dish it up and enjoy it.

Other tips
1 You can replace the baking soda with any acidic fruit pure or yogurt. But the marinade time will need to increase to 1 hours
2 The eggs must be cooked slowly over low heat until just set, and it's essential not to stir the egg mixture before it solidifies.
3 This recipe has a mild flavor. If you prefer a stronger taste, you can add more salt to the chicken broth and adjust the seasoning to your liking.
4 This recipe uses a relatively large amount of eggs. If you prefer more sauce, you can use 2 eggs instead.
