Ingredients
 

  • 1.8 kg whole chicken (head and legs removed)
  • 20 g dried goji berry (浸軟/fig1)
  • 1.5 L water

Seasoning

  • 1 tbsp sea salt
  • 1 tbsp chicken powder
  • 15 g rock sugar
  • ½ tsp turmeric powder

Chinese marinate aromatic herbs

  • 8 tbsp dried red date (soaked/cored)
  • 3 pcs bay leaves
  • 4 pcs slices of ginger
  • 4 pcs garlic
  • 2 pcs cinnamon stick
  • 2 pcs star anise (fig2)
  • ½ tsp cloves (fig3)

Suggested additional herbs

  • 2 tsp fennel seed (fig4)
  • 2 tsp Szechuan peppercorn (fig5)
  • 2 pcs licorice
  • 2 pcs dried tangerine peels
  • 2 pcs cardamom (fig6)

Instructions
 

  • Put all the aromatic herbs into a cheesecloth bag. Put it into the pot
  • Add in the water and seasoning. Bring the water to boil over high heat. Turn the heat to low. Cover and simmer for 15 mins. Turn off the heat and let it sit for another 15 mins
  • Remove the aromatic herbs bag. Bring the broth to boil over high heat. Poach the chicken both side for 10-15 mins. Take the chicken aside.
  • Add in the goji berry. Put the chicken down in the pot (chicken back side down). Turn to low heat. Cover and simmer for 20 mins. Turn off the heat. Let it sit for another 10 mins
  • Take the chicken out. Bring the sauce mixture to boil again over high heat.
  • Turn off the heat. Put the chicken down (chicken breast side down). Cover the pot with the lid. Let the chicken sit in the broth for another 20 mins
  • Take the chicken out and cool it down. Cut into pieces. Enjoy

Tips
1 Cut open the chicken so that it will be easier to cook through
2 You can use the chicken leg, drumsticks and wings (simmering over low heat for 20 mins. And turn the heat off. Let it sit for another 10 mins), and you won't need to poach again
3 It is recommended to pour the chicken with a bit of the heated broth.
