I have written many different chicken drumstick recipes. This time, I am going to make a new style of chicken drumstick. I transformed it into lollipop look. Serve it with different seasoning, it will transform into many different favors. It is simple to make, fun to cook and delicious. It is excellent for the party food.

Ingredients
- 950 g chicken drumsticks (about 10 pices)
- 60 g coarse sweet potato starch (或中筋麵粉/粟粉)
Chicken seasoning
- 1 tsp sea salt
- 1 tsp chicken powder
- 1 tsp sugar
- ¼ tsp ground black pepper
- 2 tsp oil
Homemade Szechuan pepper salt
- 2 tsp Szechuan peppercorn
- 1 tbsp sea salt
Japanese Teriyaki sauce
- 15 ml Japanese soy sauce
- 15 ml Mirin
- 80 ml water
- 1 tbsp brown sugar
Starch mixture
- 1 tbsp cornstarch
- 2 tbsp water
Instructions
- Cut the end of the chicken drumstick along the bone. Push the meat and skin up to form a lollipop. Marinade it for at least 1 hours
- Coat the drumsticks with sweet potato starch evenly. Brush evenly with oil. Put it into the baking tray covered with parchment paper.
- Air fry it with 180°C/350°F for 18-20 mins
- or oven grill it at 200°C/400°F for 30-35 mins
- Add in the Teriyaki sauce mixture into the pan. Bring it to boil over medium heat. Add in the starch mixture to thicken the sauce. Put it aside
- In a dry pan. Stir fry the Szechuan pepper salt mixture until the salt turn light brown. Dish it up and cool it down. Blend it finely with a food processor. Set it aside.
- Drizzle half drumsticks with Szechuan pepper salt and the rest with Teriyaki sauce. Enjoy

椒鹽份量較為,但剩下的可以留起儲存下次再用
椒鹽及照燒汁可以買超市現成的,但味道較為遜色
Other flavors:
Mexican: 1 tbsp of cumin + 2 tsp of cayenne pepper powder
Honey: 1 tbsp of honey + 1 tsp of garlic powder
