There are many recipes about water chestnut cake. My version is coming from a Dim Sum chef Billy. I modified it a bit so that it is more easier for anyone to follow. This recipe will make a crispy, golden, tender water chestnut cake that you have never tasted before

Ingredients
3 lbs water chestnut cake ingredients
- 12 pcs water chestnut (sliced)
Syrup mixture
- 900 ml water
- 220 g rock sugar (fig1)
- 90 g brown sugar (fig2)
Starch mixture
- 500 ml water
- 250 g waterchestnut starch (fig3)
- 1 tbsp vegetable oil
- 2 tbsp custard powder (fig4)
- 1 tbsp wheat flour (fig5)
- 1 tbsp Tapioca starch (fig6)
Instructions
- Combine the starch mixture. Mix it well until it is smooth. Drain over a sieve and put it aside.
- Boil the syrup mixture in a pot over high heat until the sugar is dissolved. Add in 1/5 of starch mixture to thicken the syrup
- Pour the syrup mixture into the starch mixture. Mix it well until it is smooth. Add in the water chestnut slices.
- Brush the oil around the aluminum tray. Add in the mixture. Cover and steam over high heat for 30 mins
