HK style roast duck legs

It took lot of effort and time to roast the entire duck. But I modified the recipe and roast only the duck legs. It is much simpler and easy to handle
You may ask why bother to make it at home. It is easy to get it from the supermarket anyway. You have better control of the ingredients and seasoning when you home made it.
Also, when everyone is impressed of your dish, the happiness is priceless. And it is actually not hard to make it home, so why not?

Ingredients
 

  • 3 pcs Duck legs (about 300-350g each)
  • 2 tbsp vegetable oil

Seasoning

  • 1 tsp sea salt
  • 1 tsp chicken powder
  • 1 tsp Chinese 5 spices powder (fig1)
  • ½ tsp sugar
  • 1 tsp garlic powder
  • 1 pcs star anise (fig2 crushed)
  • 1 pcs cinnamon stick (fig3 crushed)
  • 1 tsp minced ginger
  • 2 tsp minced shallots
  • 2 tsp Hoisin sauce (fig4)
  • 2 tsp Chu Hou sauce (fig5)
  • 2 tsp Chinese rose wine (fig6)

vinegar mixture

  • 100 g maltose sugar (fig7)
  • 20 ml Chinese red vinegar (fig8)
  • 30 ml white vinegar
  • 250 ml water
  • 1 tsp salt

Instructions
 

  • Pour some hot water 3-4 times over the duck skin to firm the skin up.

  • Add vinegar mixture in a heat proof container. Place it over hot water to dissolve the malt sugar. Thinly brush the skin with the vinegar mixture 2-4 times. Each time, you need wait for it to dry out before brush another layer of vinegar mixture.

  • Smear the marinade evenly over the duck meat. Let it dry out in the fridge for at least 12 hours without any covering

  • Preheat the oven 200°C/400°F. Wipe the marinade from the duck meat. Place the duck legs in oven. Roast it for 23-25 mins

  • Take the duck legs out from oven. Brush a thin layer of oil over the skin. Send it back to oven. Roast it 180°C/350°F for 8-10 mins. Enjoy

Tips
1- If your duck legs are too big, then cut some slits on the meat side with scissors
2- Be patient and careful to handling the duck skin if you want duck legs turn out perfect
3- Don't let the marinade get onto the skin. Or it will have a brunt spot after roasted
Air fryer cooking time and temperature:
1-180°C/350°F 15-20mins
2- Brush oil over skin. Air fry it 160°C/325°F for 5-8 mins

I’m in California and just discovered you in FB. I have the same brand of maltose sugar. How do you get the maltose sugar out of the plastic container? It is soooo stiff? Thanks.
