Waffle is so popular in Canada. Most breakfast or brunch resto will serve it for sure. Most of the people will use the pancake mix to make it. It is easier but the outcome is totally different than mine version. I will show you in this recipe, how to make the most crispy and fluffy Belgian waffle. Serve it with Maple syrup. It is a super heavenly.

Equipment
- Waffle maker or waffle plate
- Electric hand held mixer
Ingredients
- 70 g all-purpose flour
Batter mixture
- 20 g custard powder
- 10 g cornstarch
- 80 ml milk
- ⅔ tbsp baking powder
- ½ tsp baking soda
- 1 tbsp sugar
- 1 pcs egg yolk
- 1 tbsp melted butter
- 2 tsp vanilla extract
Meringue
- 1 pcs egg white
- ½ tsp cream of tartar
- 1 tbsp icing sugar
Instructions
- Preheat the waffle maker or the waffle plate
- Combine all the batter mixture until smooth. Add in the flour and mix it smooth. Put it aside
- Put the meringue ingredient in a bowl. Beat the egg white until stiff peaks. Add it into the batter mixture in 2 separated batch
- Coat the waffle plate with a layer of oil. Add in batter mixture. Cook for 4 mins or until golden
- Place the waffle on the cooling rack for 1 mins. Dish it up and serve it with syrups and butter.
