I found out that I didn't cook enough fish for my daughter. I need to start create more fish dishes for her.This recipes has 3 main steps. Firstly, pan-fried the egg tofu. Then pan-fried the salmon. And lastly, you need to make the special caramel sweet sour sauceThe sauce is so sticky. So it protect well the crispy salmon. You can still feel the crunchy crust from the salmon. And the best part is.... my daughter finished it all her part.....hahhahahaha

Ingredients
- 700 g salmon fillet (sectioned)
- 400 g egg tofu (cut into pieces)
- 25 g all-purpose flour (or cornstarch)
- 2 tbsp diced coriander
- 1 tbsp roasted sesame seed
Seasoning
- ½ tsp salt
- ½ tsp garlic powder
- ¼ tsp white pepper
- 25 g all-purpose flour (or cornstarch)
- 1 pcs egg
Sauce mixture
- 2 tbsp Indonesian sweet soy sauce(kecap manis)
- 25 g rock sugar (crushed)
- 2 tbsp hot water
- 1 tbsp lemon juice
Starch mixture
- 2 tbsp cornstarch
- 3 tbsp water
Instructions
- Marinade the salmon with seasoning for 10 mins
- Coat both sides of egg tofu with flour. Add 2 tbsp of oil in non sticky pan. Heat the pan over medium heat. Pan-fry the egg tofu until both sides are golden brown. Dish it up
- Add 2 tbsp of oil in non sticky pan. Heat the pan over medium heat. Pan-fry the salmon until both side are golden brown. Put it aside.
- Add in the rock sugar in the non sticky pan. Heat it over medium heat until the sugar starts to melt. Turn the heat to low. Simmer until all the sugar become caramel
- add in the rest of the sauce mixture. Do the taste test. Turn the heat to high. Add in starch mixture until the sauce is thickened
- Add back the salmon, sesame seeds, diced coriander and mix well. Top it on the tofu. Enjoy.
