Coat both sides of egg tofu with flour. Add 2 tbsp of oil in non sticky pan. Heat the pan over medium heat. Pan-fry the egg tofu until both sides are golden brown. Dish it up

Add in the rock sugar in the non sticky pan. Heat it over medium heat until the sugar starts to melt. Turn the heat to low. Simmer until all the sugar become caramel
add in the rest of the sauce mixture. Do the taste test. Turn the heat to high. Add in starch mixture until the sauce is thickened
Add back the salmon, sesame seeds, diced coriander and mix well. Top it on the tofu. Enjoy.
