Equipment
- Air Fryer
Ingredients
- 900 g spare ribs
- 80 g coarse sweet potato starch Or all purpose flour or cornstarch
Seasoning
- 1 tsp garlic powder ([fig1])
- 1 tsp salt
- 2 tsp sugar
- 2 tsp shacha sauce ([fig2])
- 1 tsp oyster sauce ([fig3])
- 100 ml yogurt ([fig4] with sugar)
- 1 pcs egg
Sauce mixture
- 6 tbsp mayonnaise ([fig5])
- 4 tbsp condensed milk condensed milk
- 2 tsp lemon juice
Instructions
- Marinade the pork ribs for at least 1 hour or more
- Mix the sauce mixture. Chill it in the refrigerator for later use
- Add sweet potato flour to the baking tray. All in the pork ribs and coat entire ribs with starch. Set it aside and wait for 10 minutes.
- Put the ribs in the air fryer. Coat with a thin layer of oil. Air fry at 190°C/380°F for 8 minutes
- Flip the ribs over. Coat with a thin layer of oil. Air fry for 7 minutes at 200°C/390°F
- In a large bowl, Mix the pork ribs and the sauce mixture together. Serve it hot
Notes
* Marinade it longer with yogurt will make the ribs more tender
* For oven bake: Baked at 200°C/390°F for 15-20 minutes.
* Pan frying: Pan fry for 5-8 minutes on each side over medium heat with about 50 ml of oil. Set them aside. Heat the oil again over high heat. Pan fry the ribs again for 30 seconds on each side.

Do I use country-style ribs or St. Louis style ribs? Which type is better? Thanks.
Not sure…Because name is vary in different location. In general,, it is better to choose meaty, fatty ribs with bone.
