Picked cabbage and Winter Melon Chicken Pot

The weather is hot and I have no appetite. It is best to cook the pickle cabbage and winter melon. The pickle cabbage has a sour taste, which is very appetizing. It is really comfortable to eat. It is very suitable for summer when there is no motivation to cook 😁

Ingredients
 

  • 450 g chicken fillet (sliced, or use minced)
  • 500 g winter melon (peeled, seed removed, cut into pieces)
  • 250 g pickle cabbage (sliced)
  • 3 pcs garlic (mashed)
  • 400 ml chicken broth
  • 2 tbsp diced coriander
  • 2 tbsp diced green onions
  • 1 tsp fish sauce
  • 1 tsp sugar
  • 4 pcs dried bean curd or hotpot bean curd

Chicken seasoning

  • 0.5 tsp sea salt
  • 0.5 tsp garlic powder
  • 0.25 tsp ground black pepper
  • 2 tsp cornstarch

Instructions
 

  • Marinade the chicken for 15 mins
  • Heat the pan over high heat. Add in winter melon and pickle cabbage. Stir fry for 1 min
  • Add in chicken broth. Top with chicken fillets. Cover the pan with a lid. Turn the heat to low. Simmer for 5 mins
  • Open the lid and check. Add water to cover 2/3 of the ingredients (if it is enough, don't add water). Turn to medium low heat. Cover and simmer for 20 mins
  • Turn the heat to high. Add in the fish sauce and sugar. Do a taste test. Add in coriander and green onion. Enjoy
