500gwinter melon(peeled, seed removed, cut into pieces)
250gpickle cabbage(sliced)
3pcsgarlic(mashed)
400mlchicken broth
2tbspdiced coriander
2tbspdiced green onions
1tspfish sauce
1tspsugar
4pcsdried bean curdor hotpot bean curd
Chicken seasoning
0.5tspsea salt
0.5tspgarlic powder
0.25tspground black pepper
2tspcornstarch
Instructions
Marinade the chicken for 15 mins
Heat the pan over high heat. Add in winter melon and pickle cabbage. Stir fry for 1 min
Add in chicken broth. Top with chicken fillets. Cover the pan with a lid. Turn the heat to low. Simmer for 5 mins
Open the lid and check. Add water to cover 2/3 of the ingredients (if it is enough, don't add water). Turn to medium low heat. Cover and simmer for 20 mins
Turn the heat to high. Add in the fish sauce and sugar. Do a taste test. Add in coriander and green onion. Enjoy
