Ingredients
 

  • 600 g winter melon (peeled, seed removed, cut into pieces)
  • 450 g chicken fillet
  • 1 pcs salty egg yolk
  • 1 pcs salty egg white
  • 150 g glass noodles (soaked)
  • 2 pcs slices of ginger
  • 15 g dried scallop (dried)
  • 15 g dried shrimps (dried)
  • 20 g Semen Coicis (soaked)
  • 400 ml chicken broth
  • 100 ml water

Chicken seasoning

  • ½ tsp sea salt
  • ½ tsp garlic powder
  • ¼ tsp ground black pepper
  • 2 tsp cornstarch

Instructions
 

  • Marinade the chicken for 15 mins
  • Heat the pan with 1 tsp oil over high heat. Add in the ginger slices and pan fry for 30 sec. Add in the winter melon and mix it well
  • Add in chicken broth and bring it to boil. Add in the dried scallop and shrimps. Top with chicken fillets. Cover the pan with a lid. Turn the heat to low. Simmer for 5 mins
  • Add water to cover 2/3 of the ingredients (if it is enough, don't add water). Turn to medium low heat. Cover and simmer for 20 mins
  • Bring the broth to boil over high heat. Add in the salty egg white and mix it well. Add in the noodle and put the salty egg yolk in the middle. Turn off the heat. Cover and let it sit for another 5 mins. Enjoy
