A super refreshing dish for the hot summer. It is so simple to make. You will just need 1 pot and everything will be cooked with it.

Ingredients
- 200 g chicken fillet
- 100 g noodle
- 30 g cucumber (sliced)
- 1 tbsp diced coriander
- 1 tbsp diced green onions
- 1 tbsp fried onion (Optional)
Chicken seasoning
- ½ tsp salt
- ½ tsp sugar
- ½ tsp garlic powder
- ½ tsp Chinese 5 spices powder
- 1 tsp cornstarch
Broth mixture
- 400 ml chicken broth
- 300 ml water
- 2 pcs slices of ginger
- 3 pcs garlic
- 2 pcs green onion
- 2 pcs star anise
- 2 pcs bay leaves
- 2 pcs cinnamon stick
Sauce mixture
- 1 tbsp Chinese black vinegar
- 1 tbsp Japanese soy sauce
- 1 tbsp sugar
- 1 tbsp roasted sesame seed
- 1 tsp sesame oil
- 2 tsp chili oil
- 1 tbsp water
Instructions
- Marinade the chicken for the seasoning for 15 mins. Add the broth mixture into a pot and bring it to boil over high heat. Turn off the heat. Cover and let it sit for 15 mins
- Bring the broth mixture to boil again. Add in the chicken. Turn the heat to medium low. Simmer for 10 mins. Take it out and let it cool down. Cut it and put it aside.
- Add the noodle into the pot. Cook it through as per the package instruction. Soak it into the icy water. Drain it well and put it aside.
- Put the noodle into a plate. Top with chicken, cucumber. Drizzle the sauce mixture. Top it with coriander, green onion and fried onion. Enjoy
