600gwinter melon(peeled, seed removed, cut into pieces)
450gchicken fillet
1pcssalty egg yolk
1pcssalty egg white
150gglass noodles(soaked)
2pcsslices of ginger
15gdried scallop(dried)
15gdried shrimps(dried)
20gSemen Coicis(soaked)
400mlchicken broth
100mlwater
Chicken seasoning
½tspsea salt
½tspgarlic powder
¼tspground black pepper
2tspcornstarch
Instructions
Marinade the chicken for 15 mins
Heat the pan with 1 tsp oil over high heat. Add in the ginger slices and pan fry for 30 sec. Add in the winter melon and mix it well
Add in chicken broth and bring it to boil. Add in the dried scallop and shrimps. Top with chicken fillets. Cover the pan with a lid. Turn the heat to low. Simmer for 5 mins
Add water to cover 2/3 of the ingredients (if it is enough, don't add water). Turn to medium low heat. Cover and simmer for 20 mins
Bring the broth to boil over high heat. Add in the salty egg white and mix it well. Add in the noodle and put the salty egg yolk in the middle. Turn off the heat. Cover and let it sit for another 5 mins. Enjoy
