Pat dry the salmon both sides until dry. Rub the season on the fish both side.
Coat evenly the flour on the salmon
Heat the pan with medium high heat with 1 tbsp of oil. Add in the salmon. Pan-fry until one side is golden.
flip over, pan fry it for 1 min. Cover the pan with a lid. Turn the heat off after 15 seconds. Let the salmon sit in the pan for 10-15 mins
Add the sauce ingredients (except the broth) in the pan. Stir fry until the onion is soft. Add in the broth and cook for 3 mins. Do taste test and add in the starch mixture to thicken the sauce.
Pan fry the bottom of the fish over high heat for 30 mins. Dish it up and top with the mushroom sauce. Enjoy.
