Butterfly the chicken. Rinse and clean well. Pat dry the chicken.
Marinade the chicken with seasoning for at least 2 hours
Soak the lotus leaf in 40°C/100°F warm water for 5-10 mins until soft. Drain it well.
Open the lotus leaf. Coat interior with oil. Place the chicken in and wrap it up. (the chicken skin side up)
Wrap the lotus leaf with parchment paper. Seal it well with stapler or tight it up with a cotton robe.
Place it in preheated oven. Roasted it with 230°C/450°F for 35-40 mins
Open the lotus leaf. Let it rest for 10 mins. Cut into pieces and serve.
Air fryer:
Place it in preheated airfryer. Air fry it with 200°C/400°F for 30-35 mins
Steaming method
Steam it over high heat for 45-50 mins

Tips1 Cut open the chicken tights to shorten the cooking time2 You can replace the whole chicken with chicken quarter legs, or chicken drumsticks, or half chicken. The cooking time and temperature will be the same. For chicken wing, roasted it with same temperature but reduce the cooking time to 20 mins3 It is recommended to serve the chicken without any sauce to enjoy the lotus flavor first.
