Instructions
Cook the pasta as per package instruction until al dente
On the same time, heat the pan with 1 tsp of oil over medium high heat. Pan fry the pancetta until golden and crispy. Put the pancetta into a bowl
In another bowl, beat the egg until smooth. Add in the cheese and mix it well
Put the cooked pasta into the pancetta and mix well. Add the egg mixture in 2 patches. Mix it well.
Do a taste test, add salt and pepper to adjust the taste as per your liking. Dish it up and enjoy
Notes
Make sure the pasta is nearly 70-80 degrees Celsius before adding in the egg mixture.
