It is a very popular dish in HK bistro. Every bistro has its special version. I am going to combine all of the special version together. To create an ultimate luncheon meat & egg sandwich.

Ingredients
- 2 pcs toast
- 3 pcs egg
- 2 pcs slices of cheese
- 2 tbsp diced green onions
- 2 pcs luncheon meat
- 2 tsp butter
- 1 tbsp milk
Seasoning
- ¼ tsp sea salt
Instructions
- brush 1 tsp of butter on the bread. Toast it in a toaster until golden
- Put half portion of egg in the pan, add in the milk and the remaining butter. Turn the heat to medium. Stir and cook until the egg is scrambled. Dish it up and put it aside.
- Heat the pan with 1 tsp over high heat. Pan fry the luncheon meat until golden and crispy
- Heat the pan with 1 tsp over high heat. Combine the remain egg with salt and green onion. Add the mixture into the pan. Pan fry until the egg is golden.
- Add in the cheese in the center of the egg. Then top it with scrambled egg. And cover another cheese on top. Fold the egg to wrap up the ingredient and form a square. Flip it over. Pan fry it for another 30 seconds.
- Combine the bread, egg, luncheon meat together to make a sandwich. Cut it in half and enjoy
