Equipment

  • 1 pound cake mold8.5inch L x 4.5inch W x 2.5inch H

Ingredients
 

  • 400 ml coconut milk
  • 300 ml fresh mango juice
  • 60 g sugar
  • 50 ml water
  • 20 g gelatin powder
  • 250 g mango (about 2 pieces)

Instructions
 

  • Scope out the flesh of mango. Cut into pieces
  • Mix the gelatin with water. Let's it sit for 5 mins until expanded
  • Add in the gelatin into the pot. Add 100ml coconut milk and sugar. Heat it up until the mixture is warm and the sugar is dissolved
  • Drain the mixture over a sieve into a big bowl. Add in the remaining coconut milk and mango juice. Mix it well and let it cool down.
  • Pour the mixture into the cake mold. Place the diced mango gently on top. Put it into the fridge for at least 4 hours. Remove it from the mold and cut it into pieces. Enjoy!

Notes

Tips and notes
1- It is recommend to store the coconut milk and fresh mango juice into fridge for at least 3 hour before start the cooking.
2- Make sure the mixture is completely cool down before put it into the fridge
3- 60g of sugar is less sweet. If you want, you can increase the sugar to 80-100g
4- You can use the mango juice from supermarket. Or you can make it with fresh mango. You just need to blend the mango with some water in a processor
 
Q&A for using the gelatin
Q: Can I use gelatin sheet instead ?
A: Yes, just use the same required quantity. Soak and drain it well. You can ignore the 50ml water in the recipe.
Q: What is the different between gelatin powder and sheet?
A: Gelatin sheet is more easy to use. It is also much more stable compare it to powder. But it is more expensive
Q: Can I use Agar powder?
A: Yes, but you need to adjust the required quantity yourself
Q: Why combine the gelatin with cold water?
A: Gelatin will have crumb when using hot water
Q: How can I tell if the mixture is warm
A: Use your finger to test it out. If you feel it hot but not burning your finger, it should be hot enough.
Q: Why the gelatin powder doesn't dissolve?
A: The gelatin powder will melt in 30 degrees Celsius or above.
Q: Why the gelatin doesn't solidify?
A: The fish gelatin powder will solidify when it is below 5 degrees Celsius
Q: The outcome is too soft or too hard
A: Each brand of gelatin powder has different quality and efficacy. It is recommended to test it yourself
Test method: Use 500 ml of water to add 15 grams of gelatin powder. Store in the fridge until it becomes solid. Adjust the quantity according to the situation.
Q: Why you don't bring the gelatin mixture to boil?
A: Because the higher the temperature, the longer time you have to wait for the gelatin powder to solidify.
Q: Does the fish gelatin powder smell fishy?
A: The gelatin powder is not actually made by fish.. It is normal to have a little odor, but it should be covered by other ingredients
