Ingredients
- 400 ml coconut milk
- 300 ml fresh mango juice
- 60 g sugar
- 50 ml water
- 20 g gelatin powder
- 250 g mango (about 2 pieces)
Instructions
- Scope out the flesh of mango. Cut into pieces
- Mix the gelatin with water. Let's it sit for 5 mins until expanded
- Add in the gelatin into the pot. Add 100ml coconut milk and sugar. Heat it up until the mixture is warm and the sugar is dissolved
- Drain the mixture over a sieve into a big bowl. Add in the remaining coconut milk and mango juice. Mix it well and let it cool down.
- Pour the mixture into the cake mold. Place the diced mango gently on top. Put it into the fridge for at least 4 hours. Remove it from the mold and cut it into pieces. Enjoy!

Tips and notes
1- It is recommend to store the coconut milk and fresh mango juice into fridge for at least 3 hour before start the cooking.
2- Make sure the mixture is completely cool down before put it into the fridge
3- 60g of sugar is less sweet. If you want, you can increase the sugar to 80-100g
4- You can use the mango juice from supermarket. Or you can make it with fresh mango. You just need to blend the mango with some water in a processor

Q: Can I use gelatin sheet instead ?
A: Yes, just use the same required quantity. Soak and drain it well. You can ignore the 50ml water in the recipe.
