Ingredients
 

  • 800 g salmon fillet (cut into pieces)
  • 30 g all-purpose flour (or cornstarch)

Seasoning

  • ½ tsp sea salt
  • ½ tsp garlic powder
  • ¼ tsp ground black pepper

Mushroom sauce ingredients

  • 150 g white mushroom
  • 40 g onion (peeled/cut into pieces)
  • 250 ml chicken broth
  • 2 tbsp butter
  • ½ tsp sea salt
  • ¼ tsp ground black pepper

Starch mixture

  • 2 tbsp cornstarch
  • 3 tbsp water

Instructions
 

  • Pat dry the salmon both sides until dry. Rub the season on the fish both side.
  • Coat evenly the flour on the salmon
  • Heat the pan with medium high heat with 1 tbsp of oil. Add in the salmon. Pan-fry until one side is golden.
  • flip over, pan fry it for 1 min. Cover the pan with a lid. Turn the heat off after 15 seconds. Let the salmon sit in the pan for 10-15 mins
  • Add the sauce ingredients (except the broth) in the pan. Stir fry until the onion is soft. Add in the broth and cook for 3 mins. Do taste test and add in the starch mixture to thicken the sauce.
  • Pan fry the bottom of the fish over high heat for 30 mins. Dish it up and top with the mushroom sauce. Enjoy.

Notes

Tips and notes
1-Salmon fillet with skin
 
Pan fry the skin side first until golden brown. Then follow the same steps as above to cook it through. At the end, pan fry both side of the salmon until all sides are golden brown
2- Salmon steak with bone
If the salmon has bone, pan-fry the skin side first. Once the skin side is crispy, following the steps mentioned in this recipe for the rest of the steps
3- Salmon with skin or bone will have fat attached. Which usually has strong fishy smell. You can add some ginger juice, mustard, or lemon juice to remove the unpleasant smell.
4- Cooking time may vary depend on different stoves. You need to adjust it accordingly.
