Mixing chicken and minced shrimps, this shrimp cakes are so delicious. The outer layer created by cornflakes. It is much crispier than just using breadcrumbs. It is an excellent dish to serve your friends or family.

Equipment

Ingredients
- 300 g Shrimp (shell removed/devined)
- 500 g boneless skinless chicken thights
- 50 g canned waterchestnut (diced fig1)
- 2 tbsp diced green onions (or coriander or half and half)
- 2 tbsp cornstarch (fig3)
- 1 pcs egg
- 1 tsp sesame oil (fig2)
- 1½ tsp sea salt
- ½ tsp garlic powder
- ¼ tsp white pepper
Crust mixture
- 1 tbsp oil
- 120 g cornflakes (fig4)
- 40 g breadcrumbs
Instructions
- Clean and dry well the shrimps. Mince the shrimps until the shrimps become a paste. Finely mince the chicken as well.
- Mix the shrimps and chicken together. Add in the rest of ingredients. Mix all together. Divide them into even small patties (about 14-18)
- Put the crust mixture into a dish and mix well. Coat each patty with the crust mixture. Freeze them for 10 min until firm.
- Put the patties into air fry. Air fry it with 190°C/375°F for 8 mins
- Turn the patties over. Air fry 200°C/400°F for 6 mins
Other cooking method
- Oven bake it with 220°C/425°F for 15-18 mins
- Pan fry it with 1 cup of oil. Pan-fry each side for 3-5 mins
