Ingredients
- 450 g chicken fillet (sliced, or use minced)
- 500 g winter melon (peeled, seed removed, cut into pieces)
- 250 g pickle cabbage (sliced)
- 3 pcs garlic (mashed)
- 400 ml chicken broth
- 2 tbsp diced coriander
- 2 tbsp diced green onions
- 1 tsp fish sauce
- 1 tsp sugar
- 4 pcs dried bean curd or hotpot bean curd
Chicken seasoning
- 0.5 tsp sea salt
- 0.5 tsp garlic powder
- 0.25 tsp ground black pepper
- 2 tsp cornstarch
Instructions
- Marinade the chicken for 15 mins
- Heat the pan over high heat. Add in winter melon and pickle cabbage. Stir fry for 1 min
- Add in chicken broth. Top with chicken fillets. Cover the pan with a lid. Turn the heat to low. Simmer for 5 mins
- Open the lid and check. Add water to cover 2/3 of the ingredients (if it is enough, don't add water). Turn to medium low heat. Cover and simmer for 20 mins
- Turn the heat to high. Add in the fish sauce and sugar. Do a taste test. Add in coriander and green onion. Enjoy
